Cucumber Salad with Peanuts & Chili Sauce

A couple of cucumber plants can easily produce a basket load of cucumbers, much more than the two of us can consume in a couple of days. When this happens, we pass out cucumbers to friends and neighbors so they can enjoy them while they are fresh and crunchy (like apples). I’m always on the lookout for ways to use these beautiful Japanese cucumbers, and pickles are usually the first thing that comes to mind. However, I discovered an alternative to pickles. This is a quick and easy recipe that can be served right away. The sweetness from honey and spiciness from the chili oil makes this salad exceptionally tasty.

You’ll only need a small amount of chili crunch to flavor the sauce. If you don’t have any on hand you can swap it out with plain chili oil or simply add a dash of crushed red pepper flakes.

Japanese cucumbers don’t need to be peeled since their skins are quite tender. Leaving the skins on will ensure an extra crunchy and colorful salad.

This refreshing cucumber salad has all the flavors and textures that make a delightfully cool summery side dish. Japanese cucumbers, crunchy-salty peanuts, sweet and spicy sauce. Serve with one of these and you have the perfect meal: teriyaki meat sticks, seared ahi, tofu, along with a side of rice.

Cucumber Salad with Peanuts & Chili Sauce

Ingredients

  • 2 Japanese cucumbers (about 12 ounces), diced

  • 1 teaspoon kosher salt

  • 2 small green onions, finely sliced

  • 2 tablespoons chopped roasted and salted peanuts

  • 3 tablespoons unseasoned rice vinegar

  • 2 tablespoons honey

  • 1 tablespoon sesame oil

  • 1 teaspoon chili crunch or chili oil

  • 1/4 teaspoon finely grated garlic

Directions

  • Slice cucumbers lengthwise into quarters. Cut away areas with seeds. Chop each quarter into 1-inch pieces. Season with 1 teaspoon kosher salt and leave to drain in a colander for about 20-30 minutes.
  • Meanwhile, in a small bowl, whisk together the rice vinegar, honey, sesame oil, chili crunch or chili oil, and garlic. Set aside.
  • Give the salted cucumbers a quick rinse to remove most of the salt. Pat dry with a clean towel.
  • Transfer the cucumbers to a low sided bowl and drizzle with the reserved sauce. Top with chopped peanuts and sliced green onions. Serve right away.

Notes

  • You may chill the cucumbers in the sauce for an hour or so if you prefer a colder salad. Sprinkle peanuts and green onions on just before serving.

Roasted Feta with Honey

This may be one of the easiest and most delicious appetizers I have made. It is a gorgeous dish to bring to the table. I served it with yogurt flatbread made into smaller rounds for this appetizer, and roasted tomatoes which added a pop of color and a sweet-tart flavor that was perfect tucked into the flatbread with the cheese. You can keep it simple by serving the feta with slices of good sourdough bread or warmed pita bread.

The roasted tomatoes go into the oven about 45-60 minutes before the feta is roasted. I love the Sugar Bomb tomatoes sold at Safeway. They make a striking presentation.

Mt. Vikos is one of the best feta cheese blocks I know of. Here on Maui you can find it at most of the markets including Hawaiian Moons, Times Kihei, Foodland, and Whole Foods. I placed the cheese and olive oil in a foil-lined baking dish so that it would be easy to remove to a plate for serving with the roasted tomatoes. If you are not using roasted tomatoes, you can skip the foil. Remember to use a baking dish that can withstand the high heat of the broiler.

This is one of those dishes that really doesn’t require a recipe because of its simplicity. Place feta block in baking dish, drizzle with olive oil, add fresh thyme sprigs if you want to, then roast until warm. Drizzle honey over the feta, broil until beautifully bronzed on the edges, season with freshly ground black pepper, and a sprinkling of Maldon sea salt, serve.

Roast the feta just before you want to serve it. The cheese should be warm and creamy, the perfect foil for pillowy flatbread or good sourdough bread.

Ingredients

  • 1 7-ounce block Mt. Vikos Feta (or your favorite feta block)

  • 2 tablespoons extra virgin olive oil

  • 3 small fresh thyme sprigs, optional

  • 1 tablespoon honey

  • Freshly ground black pepper

  • Maldon sea salt, optional

  • Red pepper flakes, optional

  • Roasted tomatoes, optional

  • Yogurt flatbread, sourdough, or pita bread for serving

Directions

  • Preheat the oven to 400 degrees. Place feta in a small foil-lined baking dish for easy transfer to a plate if serving with roasted tomatoes (one that can withstand broiler oven temperature). Otherwise skip the foil and place feta directly into a broiler safe baking dish. Drizzle olive oil over the feta and place a few sprigs of thyme on top if using. Bake until the cheese is soft and springy to the touch but not melted, about 7-8 minutes.
  • Preheat the broiler. Heat the honey in the microwave for just a few seconds until it is fluid enough to be spread with a pastry brush and then paint the surface of the feta with it. Broil until the top of the cheese browns and just starts to bubble, about 2 1/2 minutes (I used my countertop Breville Smart Oven). Keep an eye on the broiling time so the cheese does not burn. Season with pepper, a sprinkling of Maldon sea salt (optional) and a pinch of red pepper flakes (optional).
  • Serve with warmed flatbread or crusty sourdough bread and roasted tomatoes.

Notes

  • If serving with roasted mini tomatoes, place them in a baking dish, drizzle the tomatoes with a bit of olive oil, and season with salt and pepper. Bake uncovered at 400 degrees for 45-60 minutes. Yogurt flatbread can be made weeks in advance and frozen. Warm before serving.

Slow Cooker Chipotle-Honey Chicken Tacos

Sarah DiGregorio posted this recipe on the NYT Cooking blog.  She mentions that it may be the easiest tacos you will ever make, and I agree.  The two main seasoning ingredients that make this chicken so tasty, are canned chipotle chiles and honey.  These items may already be in your pantry, but if they aren’t, they are easily found in most supermarkets. Spicy, smoky, chipotle chiles combined with honey are the perfect combination.  These tacos are excellent.

Besides the chicken, chipotle peppers and honey, a few other ingredient make the dish complete.  A bit of cumin, garlic and onion powder add a nice flavor to the chicken and black beans add texture to the finished dish.

A few people commented that the chicken might be too dry since there is no added liquid.  However, as the chicken cooks slowly, it will release some liquid which helps to keep it moist.  Fillings for tacos shouldn’t be too saucy or wet, but if you want yours to have a bit more liquid, add 1/2 cup chicken broth to the slow cooker pot.  If you are making the recipe as posted, use the 1 1/2 pounds of chicken called for, or increase the amount of sauce accordingly if you use more chicken.

After the sauce is mixed with the chicken, it cooks on low for 4 hours.  Once it is done, the meat is shredded into bite-size pieces.  Lime juice and black beans are stirred in with the chicken.  The dish is now ready to serve on warmed corn tortillas.  I have frozen leftovers in small containers and it keeps well for about 3 months.

Ingredients
  • 1½ pounds boneless, skinless chicken thighs, trimmed
  • 2½ - 3 tablespoons honey
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin
  • 1 teaspoon kosher salt
  • 1 large or two medium canned chipotle chiles in adobo, seeds removed, finely chopped + 1 teaspoon adobo sauce (use 1 chile for a milder flavor and up to 4 for very spicy flavor)
  • 1 (15-ounce) can black beans, rinsed and drained
  • juice of ½ lime
  • warmed corn tortillas
  • pickled onions, avocado, cilantro, cheese, for serving
Preparation
  1. Combine honey, onion and garlic powders, cumin, salt and chipotle chiles (start with the least amount of chiles) and adobo sauce in a small bowl. Taste to see if the sauce is the right heat for you. Add more chipotle chiles if you prefer a spicier sauce. Mix the sauce with the chicken in a 5 to 8 quart slow cooker. Stir well. Cook for 4 hours (minimum 3 hours, maximum 5 hours) on low setting.
  2. Using two forks, coarsely shred the chicken in the sauce. Stir in black beans and lime juice. Cover and let the beans warm through, about 5 minutes. Taste and add more salt or lime juice if necessary. Serve with warmed corn tortillas, pickled onions, avocado, cilantro and cheese

Champagne Vinegar & Dijon Vinaigrette

Champagne Vinegar & Dijon Vinaigrette Dressed Salad

I love tangy vinaigrettes that have nearly equal parts of acid to oil.  Lettuces, arugula, tomatoes, cucumbers and so many other greens really benefit from a vibrant dressing.  If there is too much oil and not enough acid, the salad can taste bland and heavy.  Add a few grinds of black pepper and a sprinkling of kosher salt just before serving for the perfect finishing touch.

Champagne Vinegar & Dijon Vinaigrette Ingredients

Champagne vinegar is at the top of my list when it comes to making salad dressings.  It has a crisp yet light flavor and seems less acidic than other white wine vinegars. It makes a beautiful dressing especially when combined with Dijon mustard and olive oil.  Not all brands of champagne vinegar are alike. I’ve tried a few that were not as smooth and flavorful as the brand I now use exclusively, O Champagne Vinegar found at Whole Foods.  It may be bit more expensive than white wine vinegars, but it is definitely worth the price.  A good dressing brings together a salad by complimenting all of the fresh vegetables in your bowl.  On another note, the little twirl whisk pictured above is my favorite kitchen utensil for mixing up dressings.  It whisks up the ingredients thoroughly and quickly.

Ingredients
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • ¼ cup + 1 tablespoon champagne vinegar (O Champagne Vinegar recommended)
  • ¼ cup extra virgin olive oil
  • ¼ teaspoon kosher salt + more for serving
  • few grinds of freshly ground black pepper + more for serving
  • 1 teaspoon finely minced shallot, optional
Preparation
  1. Whisk Dijon mustard, honey, minced shallot if using, salt and pepper in a small bowl. Whisk in champagne vinegar. Slowly add olive oil and whisk until vinaigrette is fully emulsified. Chill until ready to serve.
  2. Place salad ingredients in a large bowl and toss with some of the vinaigrette. Transfer salad to individual serving bowls or plates, sprinkle a bit of kosher salt and black pepper over each salad (optional). Dressing will keep for 1 week refrigerated.
