Prosciutto Wrapped Pork Tenderloin Sandwiches

I posted this pork tenderloin recipe in 2015 and it’s been one of our favorites ever since.  In that recipe, the pork was cut into medallions and grilled then served with a side of asparagus and potatoes or spinach and frites.  We always had enough leftover pork to use in a sandwich which turned out to be a real winner.  We finally realized that this pork tenderloin recipe was worthy of making just for sandwiches alone.  It is delicious sliced and served with the tangy dressing on a kaiser roll or sourdough, and topped with lots of peppery arugula.

Most markets carry thinly sliced prosciutto which works best for this recipe.  I bought this packet at Whole Foods.

Dressing Ingredients

The fresh herbs, lemon, garlic and red pepper flakes combined with olive oil make a delicious marinade and dressing for the pork.

The pork tenderloin is seasoned with the marinade then wrapped with prosciutto.  It’s best to tie the tenderloin so the prosciutto stays in place as you cook the pork.

It doesn’t take long for the pork to cook as it is a small cut of meat that should be cooked to just the right temperature (145F degrees).

The prosciutto becomes crispy once grilled. It adds a flavorful punch that enhances the pork tenderloin.

Cut thin slices of the pork tenderloin and drizzle some of the reserved dressing over it then stack it on your favorite bread.  Arugula is a really nice addition for this sandwich, however, if you are not a fan of arugula any other greens such as romaine or butter lettuce would be a good substitute.

Prosciutto Wrapped Pork Tenderloin Sandwiches

This is a delightful sandwich that is easy to prepare.  Pork tenderloin is lean and the prosciutto adds a little umami flavor that is most welcome.

Ingredients
  • For the dressing:
  • ¼ cup extra virgin olive oil
  • 1 tablespoon + 1 teaspoon freshly squeezed lemon juice
  • 2 teaspoons lemon zest
  • 2 scant teaspoons minced fresh rosemary
  • 1 tablespoon finely chopped fresh sage
  • 2 teaspoons minced garlic
  • ½ teaspoon kosher salt
  • ½ teaspoon red pepper flakes
  • For the pork:
  • 1¼ pound pork tenderloin, trimmed well
  • kosher salt
  • black pepper
  • 2 ounces thinly sliced prosciutto
  • To serve:
  • Rolls or bread of your choice, mayonnaise, Dijon mustard, Swiss cheese (optional), arugula
Preparation
  1. Combine sauce ingredients in a small bowl. Set aside
  2. Lightly season pork tenderloin with kosher salt and pepper. Rub some of the sauce onto the tenderloin coating well. Reserve the rest of the sauce for serving. Wrap the prosciutto slices around the pork tenderloin. Tie the tenderloin so the prosciutto stays in place while cooking.
  3. Preheat gas grill or prepare charcoal grill to medium-high heat. Clean grill grates and brush well with oil.
  4. Grill the tenderloin covered, turning occasionally to ensure the prosciutto is browned and crisp. Check for doneness with an instant read thermometer. The internal temperature should register 145 degrees.
  5. Let pork cool before slicing into thin pieces. This will make it easier to slice the pork. You may refrigerate the pork and cut it once it has chilled a bit. Serve on your favorite roll or bread with mayonnaise, Dijon mustard, reserved dressing, arugula and Swiss cheese if you like.

Grilled Teriyaki Pork Tenderloin

Grilled Teriyaki Pork Tenderloin

Virtually anything grilled with Granny’s teriyaki sauce is terrific.  Sometimes we grill tofu, sometimes chicken, occasionally fish, or in this case for the first time, pork tenderloin.  It’s such an easy meal to whip up on a week night and leftovers are more than welcome the following day.  Pork tenderloin is lean and because of its compact size, it cooks quickly which means dinner is on the table in no time.  A side of Japanese rice and baby bok choy makes the perfect meal.

Place the sauce and pork in a bowl, or even better, a Ziplock bag.  Refrigerate for a few hours, turning occasionally.

Grilling Teriyaki Pork Tenderloin

Use a gas or charcoal grill.  This time we used our gas grill and started cooking over indirect heat (to about 95 – 100 degrees internal temperature) then finished over direct heat to 145 degrees, basting occasionally with sauce. Our favorite digital thermometer the Thermapen is essential for perfect doneness. This cooking technique is also known as the reverse sear.  The traditional method is to sear the meat first and finish in the oven or on the grill over indirect heat.  The reverse sear method prevents an over done “gray” rind and the meat cooks more evenly with  a consistent  doneness and color from edge to center. Voila!  In less than half an hour our pork tenderloin is ready.

Grilled Teriyaki Pork Tenderloin

Ingredients
  • 1 pork tenderloin, about 1 pound
  • Granny's teriyaki sauce
  • Reserve ¼ cup sauce for basting pork
  • Save remainder for finishing as described below
Preparation
  1. Trim pork tenderloin removing any visible fat and silver skin. Trim off the ends if they are very thin so that the pork tenderloin is of uniform size. The trimmings can be frozen for another meal (tacos!).
  2. Place pork tenderloin in a Ziplock bag with ½ cup of teriyaki sauce. Seal bag and place in the refrigerator for 3 - 4 hours. Turn bag occasionally so the pork is well marinated.
  3. When you are ready to grill the pork, remove it from the bag and discard marinade. Grill the pork by reverse sear method, basting occasionally with the reserved ¼ cup sauce, until the internal temperature reads 145 degrees on a digital thermometer.
  4. Meanwhile, simmer the reserved teriyaki sauce in a saucepan over medium-low heat until the sauce becomes a bit thick and syrupy. Set aside.
  5. Let pork rest for 5 minutes then slice into ½ inch pieces. Drizzle with teriyaki sauce and serve with rice and steamed bok choy.

Grilled Pork Tenderloin with Herbs and Pancetta

Pork Tenderloin with Demi GlaceNow that the weekend has finally arrived I’ll have some time to tackle some chores I’ve neglected for a while. One of which might be to sift through all of the food magazines I have stacked on the book shelves and toss a few.  It’s rare that I go back to past issues once I move them from the living room to the book shelf in the back of the house.  The exception to that would be Cooks Illustrated.  I like to keep my back issues as reference. Their in depth analysis of every recipe is quite valuable. Speaking of weekends and food magazines, I found this recipe in the August issue of Bon Appetit (this particular one never found its way to the book shelf). I finally made this dish last Sunday.  All I can say is that it’s delicious, easy to prepare, great for a dinner party.  If you happen to have leftovers it makes a tasty sandwich.

Pancetta & HerbsHerbes de Provence and fresh rosemary are rubbed on the pork tenderloin and pancetta is wrapped and tied over the herbs.

Sliced Pork Tenderloin

Grilled Pork Tenderloin with Herbs & Pancetta

Serves 6

Ingredients

1 1/2 tablespoons minced fresh rosemary

4 teaspoons herbes de Provence

4 teaspoons extra virgin olive oil

2 pork tenderloins (about 2 pounds total)

kosher salt and freshly ground pepper

16 thin slices pancetta (about 8 ounces)

Preparation

Mix rosemary, herbes de Provence and oil in a small bowl.  Rub the herb mixture over the pork.  Season the pork with salt and pepper.

Wrap pancetta slices around the pork and tie at 2 inch intervals with kitchen twine.

Gas Grill Instructions:

Heat all but one burner to high.  Grill tenderloins over the hot part of the grill, turning frequently, until a crisp brown crust forms on all sides, 8 – 10 minutes.  Turn heat down to medium and move tenderloins to cooler part of the grill to gently cook through. Close grill (if your grill has a built-in thermometer, aim for a temperature of about 350 degrees F.) and cook until an instant-read thermometer inserted into the middle of each tenderloin registers 145 degrees, 15 – 20 minutes longer.

Transfer tenderloins to a cutting board and let rest for 5 minutes.  Slice and serve with demi-glace sauce or the plum chutney suggested in Bon Appetit.

***If using a charcoal grill, build a medium hot fire; push coals over to 1 side of the grill and continue with the gas grilling instructions above.
