Salted Peanut Butter Cookies

I tend to favor crispy cookies rather than those that are soft and billowy. Knowing these were on the soft side of the cookie spectrum, I left this recipe on the back burner along with other recipes I haven’t’ gotten around to trying yet.  On a lark, I took a chance on these peanut butter cookies.  It doesn’t matter in the slightest that they are not crispy. These cookies are just pure peanut butter goodness with just a hint of salt.  Divine.

Deb over at Smitten Kitchen posted the recipe last October.  I truly regret not making these sooner.  All my friends love them and they are a breeze to make.

I used beautiful flaky Maldon sea salt but any coarse salt such as fleur de sel works well.

Ingredients
  • 1¾ cups (335 grams) packed light brown sugar
  • 2 large eggs, at room temperature
  • ½ teaspoon vanilla extract
  • 1 16.3 ounce jar Skippy creamy peanut butter
  • Flaky sea salt such as Maldon or coarse grained sea salt, to finish
Preparation
  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together light brown sugar and eggs until smooth. With a firm spatula, stir in vanilla extract, then the peanut butter. Stir well making sure the peanut butter is completely incorporated. Chill dough in freezer for 15 minutes, stirring once.
  3. Scoop dough (I used a #40 scoop) onto prepared pan. Deb says for achieving the tallest final shape it is best to set the pan in your freezer for 15 minutes before baking. My pan won't fit in my freezer so I set the pan in the refrigerator for 15 minutes.
  4. Sprinkle dough balls very lightly with sea salt just before baking. Bake for 14 or 15 minutes. The cookies will be golden at the edges. Let cookies cool on pan for a couple of minutes before transferring to a cooling rack. Cool completely before devouring.

Maple Tea Scones with Candied PecansIf you enjoy a light and delicate scone, look no further. This recipe adapted from Bon Appetit will please not only you, but just about everyone. I eat them warmed up or sometimes crisp the top a bit in the toaster oven for a few minutes.  My pantry was over flowing with lots of maple syrup and maple sugar and this maple scone recipe immediately came to mind.

Maple Tea Scones Ready for BakingThese are petite scones.  You could make them larger, but I find they are the perfect size for a morning snack with a cup of coffee.

Ingredients
  • 3 cups all-purpose flour
  • 4 tablespoons (packed) maple sugar, or dark brown sugar
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup (1½ sticks) Earth Balance Buttery Sticks, or unsalted butter, chilled and cut into ½ inch pieces. If using unsalted butter increase salt to ½ teaspoon
  • ½ cup plus 3 tablespoons lactose free half and half, or regular half and half
  • ½ cup plus 2 tablespoons pure maple syrup
  • 1 cup powdered sugar
  • ½ cup coarsely chopped candied pecans, optional
Preparation
  1. Preheat oven to 375 degrees.
  2. Whisk flour, 2 tablespoons maple sugar or dark brown sugar, baking powder, baking soda and salt in a large bowl to blend. Add butter and using a pastry blender, cut butter into dry ingredients until mixture resembles coarse meal. If you do not have a pastry blender use your fingertips to incorporate the ingredients.
  3. Stir in ½ cup half and half and ½ cup maple syrup in a small bowl to blend.
  4. Gradually add half and half mixture to flour mixture, stirring just until dough comes together. Add a bit more cream if dough is dry.
  5. Turn dough onto a lightly floured surface. Knead dough gently until smooth, about 5 turns. Cut dough into 4 equal pieces. Using floured hands, pat out dough into into even rounds; cut each round into 4 wedges. Transfer wedges to baking sheet, spacing 2" apart. Bake scones until golden and tester inserted in center comes out clean, about 13 minutes. Transfer to cooling rack.
  6. Meanwhile, whisk remaining 2 tablespoons maple sugar or dark brown sugar, 3 tablespoons half and half, and 2 tablespoons maple syrup in a medium bowl to blend. Gradually whisk in enough powdered sugar to form a thick glaze.
  7. Drizzle or spread glaze over slightly warm or cooled scones. Top with chopped candied pecans.
  8. For larger scones, pat dough into 8" round and cut into 8 wedges. Baking time will increase. Check scones after 15 minutes of baking. Continue to bake if scones need more time, checking every two minutes.

Seeded Whole Grain Soda Bread

Seeded Whole Grain Soda BreadJohn is usually our designated bread baker. However, I have a few special breads that I make too, such as this soda bread which makes the best, crunchy, hearty toast.  I fell in love with it the first time I made it.  It’s simple to make with minimal hands on time.  Let the grains and buttermilk soak while you do your errands, then mix everything together and bake this delicious soda bread.

  • ¼ cup millet
  • ¼ cup quinoa
  • 2 tablespoons amaranth (if amaranth is not available substitute 1 tablespoon each millet and quinoa)
  • 1 cup old-fashioned oats, plus more for topping
  • 2¼ cups buttermilk, divided, plus more for brushing (I used lactose free whole milk with 3 tablespoons fresh lemon juice)
  • 1 tablespoon canola oil, plus more for pan
  • 3 cups white whole wheat flour
  • 1 cup all-purpose flour
  • 2 tablespoons flaxseed
  • 1 tablespoon kosher salt
  • 2 teaspoons baking soda
  • ¼ cup unsalted sunflower seeds, plus more for topping
  • 4 tablespoons Earth Balance Buttery Sticks, cut into pieces (or equivalent butter)
  • 3 tablespoons mild flavored (light) molasses
Preparation
  1. Mix millet, quinoa, amaranth, 1 cup oats, 1 cup buttermilk, and ½ cup water in a small bowl. Cover and let sit 8 hours. (Per the original recipe, you may alternatively bring ingredients to a simmer in a small saucepan over low heat. Remove from heat and let sit until mixture is thick like porridge, about 2 hours).
  2. Preheat oven to 350 degrees. Lightly oil an 8" round cake pan.
  3. Whisk whole wheat flour, all-purpose flour, flaxseed, salt, baking soda, and ¼ cup sunflower seeds in a large bowl. Work in Buttery Sticks with your fingers until pieces are pea-size. Make a well in the center and add molasses, oat mixture, remaining 1¼ cups buttermilk, and remaining 1 tablespoon oil. Mix with a wooden spoon until dough is smooth, homogenous, and still slightly sticky.
  4. The original recipe tells you to form dough into a ball and place in pan. My dough has always been very wet. I dust my hands with flour and quickly place the dough in the prepared pan. Continue with brushing the top with reserved buttermilk, oats and sunflower seeds. Cut a large X in the top and bake until nicely browned and an instant-read thermometer inserted into the center of loaf registers 190 degrees, about 70 minutes.
  5. Let cool in pan for about 30 minutes and transfer to a rack to cool completely. Cut bread into slices and refrigerate for up to two days or freeze for up to a month.
  6. This bread is fantastic served with butter and jelly or honey, or avocado, egg salad, smoked salmon, tuna salad… endless possibilities!

The Best Green Bean Casserole

The Best Green Bean CasseroleIt all started out with the purchase of Williams-Sonoma’s Crispy Onions.  I was sold once I read the label on the package: The ultimate crunchy topping for savory casseroles.  A green bean casserole was the first thing that came to mind, but not the usual canned-ingredient variety.  The only mistake I made was not to buy more than one bag of these delightful onions.

Fresh Green BeansKimberly of the  Daring Gourmet posted a recipe  that sounded perfect.  Besides the onions and green beans, the recipe calls for bacon, an ingredient that for me, seals the deal.

Hempler's BaconHempler’s bacon is top-notch.  It is thick, lean, and smokey.  I used the pepper coated bacon in the green bean casserole but you can use regular thick cut bacon instead.  You can find Hempler’s at Safeway.

Fresh MushroomsIt may seem there are way too many mushrooms in the recipe, but as they sauté, they shrink up quite a bit and they are essential in making this casserole so tasty (along with the bacon!).

Williams-Sonoma Crispy OnionsI was able to make two green bean casseroles from the one package of crispy onions I bought. These crispy onions are far superior to the supermarket brands.  They would be delicious sprinkled over slow baked cannellini beans or any dish that would be enhanced by a crunchy topping.

Ingredients
  • 4 slices thick-cut bacon, diced
  • ½ cup finely chopped sweet onion
  • 2 medium cloves garlic, minced
  • 12 ounces button mushrooms, chopped
  • 3 tablespoons Earth Balance Buttery Sticks (or regular butter)
  • 3 tablespoons all-purpose flour
  • 1 cup half and half (I make this with Organic Valley Lactose Free Half and Half)
  • 1¼ cups chicken broth
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 pound fresh green beans, trimmed, cut into 1½" pieces and blanched (boil for 5 minutes, place beans in ice water for a few minutes, drain well)
  • 3 ounces crispy onions
Preparation
  1. Preheat oven to 350 degrees.
  2. Lightly butter 9x13" casserole dish and set aside.
  3. Fry bacon in a large skillet over medium-high heat until crispy. Reduce heat to medium. Add onions and cook until soft and translucent, about 4 minutes. Add garlic and mushrooms, cook for another 4 minutes or so, until mushrooms are soft. Transfer mixture to a bowl.
  4. Melt 3 tablespoons Buttery Sticks in the same skillet and whisk in flour. Continue whisking for another minute until the mixture has slightly deepened in color. Add the half and half and chicken broth while constantly whisking to prevent lumps. Once slightly thickened, add the mushrooms and bacon mixture along with the salt and pepper. Add green beans and stir to combine.
  5. Pour mixture into a 9x13" casserole dish and sprinkle with crispy onions, covering the top of the casserole. Bake uncovered for 30 minutes.
  6. ***You may prepare the casserole a few hours in advance except for adding the onions (they will become soggy if you add them in advance). Remove the casserole from the refrigerator 30 minutes prior to baking. Sprinkle onions over the top and bake.

Quick Aleppo Dill Pickles

Quick Aleppo Dill PicklesIn earlier posts, I’ve mentioned that we love virtually all forms of pickles.  These refrigerator dill pickles are scrumptious.  Crunchy with a little heat from the Aleppo pepper flakes, they are ready to eat in just an hour. John, always on the lookout for different pickles, found the recipe in my Bon Appetit magazine and quickly ordered Aleppo pepper from Amazon knowing we wouldn’t be able to find it here on Maui.  Featuring large flakes with a beautiful deep red color and medium heat, it is widely used in Middle Eastern cooking. This is our new favorite savory pickle.

Keiki CukesThe original recipe called for Persian cucumbers which are difficult to find here on Maui. These beautiful Keiki Cukes are readily available at our local Costco and they are perfect for pickles.

Quick Aleppo Dill PicklesIf you are in the mood for pickles, go ahead and make a batch of these crunchy dills.  Once you taste them you will want to have  a jar in your refrigerator at all times.  Sprinkle on za’atar for a delicious finishing touch just before serving the pickles.

  • 8 Keiki Cukes or Persian cucumbers (about 1¼ pound) quartered lengthwise
  • ¼ cup coarsely chopped fresh dill
  • 2⅓ cups distilled white vinegar
  • ⅓ cup sugar
  • 1 medium garlic clove, finely grated
  • 1 tablespoon Aleppo pepper
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons kosher salt
  • 1 teaspoon red pepper flakes
  • 1 teaspoon freshly ground black pepper
  • Za'atar and flaky sea salt (for serving)
Preparation
  1. Pack cucumber spears and dill into a large heatproof jar.
  2. Bring vinegar, sugar, garlic, Aleppo pepper, lemon juice, kosher salt, red pepper flakes, and black pepper to a boil in a medium saucepan, stirring to dissolve sugar. Let cool slightly, then pour brine over cucumbers to submerge. Seal jar and chill at least 30 minutes.
  3. To serve, remove cucumber spears from brine, lightly shaking off excess liquid but leaving on any seasonings. Sprinkle with za'atar and sea salt.

Crispy Furikake Chex Mix

Crispy Furikake Chex MixHere’s a crunchy, sweet and salty snack that all of my co-workers love.  I make two pans at a time and pack them in whatever containers I have handy. When at work and having a stressful day, snack on this.  Relaxation ensues!

Chex Mix IngredientsThere are many variations of this delicious treat.  It’s up to you what crunchy ingredients you want to include. This time I tossed together pretzel sticks, corn Chex, Stacey’s bagel chips, rice Chex, honey roasted almonds, Honeycomb cereal, furikake and Fritos.  Your imagination is the only limit.

Chex Mix SauceThere is a bit of soy sauce in this recipe that lends a subtle saltiness to this snack.  Also a few dashes of cayenne pepper adds a nice zing. This is my favorite furikake mix.

Ingredients
  • ½ cup + 2 tablespoons Earth Balance Buttery Sticks (or butter)
  • ¼ cup vegetable oil
  • ¼ cup + 1 tablespoon light corn syrup
  • 1 tablespoon + 1 teaspoon soy sauce (not light)
  • 1 teaspoon Worcestershire sauce
  • ½ cup granulated sugar
  • few dashes cayenne pepper
  • 2 cups corn Chex
  • 2 cups rice Chex
  • 1 cup Honeycomb cereal
  • 2 cups pretzel sticks
  • 2 cups broken bagel chips
  • 2 cups Fritos
  • 1 cup honey almonds or regular roasted almonds
  • ½ cup furikake
Preparation
  1. Preheat oven to 250 degrees.
  2. Line two large rimmed baking pans with foil.
  3. Stir ½ cup + 2 tablespoons Buttery Sticks, vegetable oil, corn syrup, soy sauce, Worcestershire sauce, sugar, and cayenne pepper in a medium pot over medium-low heat until sugar dissolves. Transfer mixture to a small bowl, whisk to combine and cool slightly.
  4. Combine corn Chex, rice Chex, Honeycomb cereal, pretzels, bagel chips, Fritos, and almonds in a large bowl. Pour sauce over cereal mixture and toss well (I use disposable gloves). Sprinkle furikake over mixture, toss again. Bake for 1 hour and 15 minutes, stirring mixture every 15 minutes. Let cool completely on pans. Store in airtight containers.
